"Bo Bo Ji" Sichuan spicy chicken and vegetable on bamboo skewers


This spicy street food "Bo Bo Ji" is one of my husband's favorite Sichuan dishes. After my circus went to bed, we had a quiet dinner without kids bothering us. But my son came in to bothering me during cooking lol, like he always like to pop in my video unexpectedly!

Recipe:

Part 1 Chicken soup

1 whole chicken

2 green onions

1 tsp Sichuan peppercorn

20g ginger crushed

2.5 quarts water (Makes about 6-8 cups of chicken soup)


Part 2 ingredients for stir frying

1/2 Red onion

2 green onions

2 tbsp Sichuan broad bean chili paste

4-5 cloves of garlic

5 star anise

3 bay leaves

2 cinnamon sticks

2 Cao Guo (Chinese black cardamom)


Part 3 Chili oil sauce

2 tbsp chili oil

1/2 tbsp Sichuan peppercorn oil

2 tbsp sesame oil

1 tsp sugar

2 tbsp crushed roasted peanuts

1 tbsp sesame seeds

salt to taste

Vegetables on the bamboo sticks are your choice!!! Make the chicken soup first, then cool the chicken on the side, save the soup. Mix the Part 3 ingredients together set on the side, Stir fry part 2 ingredients, then add chicken soup and chili oil sauce. Mix everything together, cool down! Then soak all the chicken and vegetable on the skewers in the spicy sauce for at least 30 minutes before you serve. This dish is serve cold:) great with beer and rice!
