How I and my kids survive sick days? Lots of soup! Especially ones with Daikon radish. Health days you can have this tasty soup too! Boost your energy! Easy Daikon radish Shrimp meatball soup 200g of Shrimp (depending on the size, about 10-11 shrimp) 2 teaspoons corn starch 1/4 cup diced onions 1 egg 1 tsp salt 2 tablespoons of vegetable oil (I use canola oil) Thinly sliced ginger 300g (1 and 1/2 cup) Daikon radish 800ml (3-4cups) Water 15g (1 tablespoon) Dried shrimp (You can them at any asian market, soak them in warm water about 10 minutes before you put in the soup) A dash of white pepper Green onions Salt to taste 1. Chop the shrimp, don’t puree keep the texture. 2. Mix corn starch, onions, egg and salt in a mixing bowl 3. Heat the pot on high heat, add vegetable oil 4. Stir-fry ginger and radish (you can add the pre-soaked shrimp at this step too) 5. Add water, boil the ingredients for about 10-15 minutes. 6. Shape the shrimp mixture with a small spoon, put them in the soup one by one.Cook 2-3 minutes or until shrimp are opaque. 7. White pepper, green onions and salt to taste
